Summer is nearly upon us and I, for one, cannot wait until I no longer have to worry about getting kids to school on time and rushing around to pick them up from activities. I am so looking forward to taking my kiddos to the pool, relaxing and watching them swim while I get some sun and sip on my new favorite summer cocktail.
Here’s why I love this cocktail, y’all. I work very hard to keep in shape and, while I love adult beverages as much as the next girl, I do not love the calories they contain. This drink contains all natural ingredients, no added sugars and has approximately 140 calories. Plus, coconut water has more minerals, vitamins and electrolytes and is more hydrating than sugary, artificially flavored sports drinks or traditional drink mixers. Of course, I’m not necessarily concerned about all of this when I’m imbibing in cocktails, but I kinda dig that an adult drink can be fun and good for me at the same time!
And while we’re here, I also want to point out these amazing copper mugs. Aren’t they beautiful? I scored these amazing mugs from the folks over at Moscow Muled. These babies are beautifully handmade with pure, high-grade, food-safe copper and lined with high-grade nickel. This is important because copper is a heavy metal that reacts with acidic fluids (such as lime). If you use a copper mug that is not lined with nickel, the acidic fluids in your drink will cause a chemical reaction which may cause you to ingest too much copper, leading to an unhealthy and potentially dangerous concentration of copper in your body. No bueno!
Not only are these mugs safe for all kinds of cocktails, they are great for hot or cold drinks. Plus they are absolutely gorgeous and can be used in so many other ways (think: succulent planter or a pen holder for your desk!). Anyway, I’m so excited to share this recipe with you. I’ve named it the Lime in Da Coconut Summer Refresher because I’m ridiculous and it makes me laugh (or perhaps it’s the tequila talking). Regardless, this is now my favorite go-to summer drink and I hope you love it as much as I do! Cheers!
- 2 ounces (about 2 shots) of silver tequila
- 1 12-ounce can of coconut water (or sparkling coconut water)
- 1 lime
- salt or sugar for the rim (optional)
- Rub a bit of lime over the rim of each mug and dip in sugar or salt (optional).
- Fill your copper mugs with ice.
- Pour 1 shot of tequila in each mug.
- Split the coconut water evenly between the two mugs.
- Cut the lime in half and squeeze a half into each mug.
- Stir and serve. Enjoy!
