I love breakfast. It is, by far, my favorite meal of the day. Probably because I am drinking coffee when I’m having breakfast and coffee makes me happy. Whatever the reason, I am passionate about breakfast.
However. I have two toddlers. Life can be very chaotic in the mornings. Nine mornings out of ten, I am rushing to get them clothed, fed and ready to head out the door so I have very little time to feed myself a healthy, hearty morning meal. I have had to come up with some pretty quick ways of feeding myself and my go-to source for inspiration has been Pinterest.
Can we just take a moment to thank the internet gods for making Pinterest? I am pretty darn sure I would be feeding my family nothing but hamburgers and hot dogs if it weren’t for the genius recipe gurus that pin their creations for me to use. I rarely use recipe books anymore!
So today I have a Pinterest round-up of some of my favorite quick and easy breakfast ideas. Not only are these recipes easy, they are delicious and (for the most part) healthy. Woo hoo!
Lately, I have been having a love affair with avocado. I want it all the time. This Avocado Toast with Egg recipe combines my favorite things (eggs, avocado, cheese) and makes it a delicious, healthy and filling meal!
These Oatmeal Cupcakes are a great on-the-go breakfast option. You can make a big batch of them in one afternoon and then eat off of them for a week or two. Perfect busy morning solution!

I love this simple, wholesome granola bar recipe. It’s easy and you can make a whole pan of them to last you through the week. You can also add your favorite ingredients to this basic recipe to make it all your own.
I adore this Bacon, Egg, and Cheese Cups recipe because it’s not only a fantastic breakfast option for me, it’s also super toddler friendly! My kiddos love to have their own little “egg muffin” when we’re rushing out the door. Genius!
I love carbs, but they don’t love me. Every time I have a carb-heavy breakfast I feel lethargic and grumpy. That’s why I love this Crustless Bacon, Spinach and Mushroom Quiche recipe. It gives me all the things I love about a quiche without the lethargy-inducing crust. And when I make this one, I know I can have it all for myself because my husband hates mushrooms! Yay me!
This Peanut Butter Banana Smoothie recipe is a hit at our house. I love it, my kids love it, it’s a win-win. Every now and then, you just have to have a smoothie (or “smoozie” as my kids call it) for breakfast and this is it!
You can’t live in Texas without incorporating a quesadilla into every type of meal category. We have quesadillas for lunch, dinner, dessert…and now breakfast! This Breakfast Quesadilla option is so versatile; you can literally put anything your heart desires in it. This one has eggs, cheese and ham and it is so delicious. These are also perfect for the mornings everyone is rushing to get out the door and you need something you can easily eat in the car.
As much as I would love to be that mom who gets up early and has a spread of hot breakfast options on the table waiting for my family when they wake up, I am not and likely never will be. Quick and easy is how I roll and these recipes help me get myself and my family fed in no time!
