From the very beginning of its existence, Pinterest has been a treasure trove of great ideas for recipes. I have used it to find some of my very favorite quick weeknight meals that my family and I love and use on a regular basis. I wanted to share with you some of my absolute favorites. I guarantee you will love these recipes!
Easy Oven Baked Spicy Chicken Tacos
We’ve had these easy and delicious tacos several times and they’re awesome! I usually modify the recipe by using the non-spicy taco seasoning and sometimes we’ll use beef instead of chicken. These are a hit with the kids too!
Honey Glazed Salmon

Via Damn Delicious
I am pretty picky when it comes to fish. Especially salmon. You definitely need to buy a fresh piece of wild-caught salmon. Believe me, the it’s worth every penny. This recipe is so good and so easy. I serve it with sautéed asparagus and wild rice. Perfect for a weeknight meal.
Salsa Verde Chicken Enchiladas

Via Kevin & Amanda
Out of all of the recipes here, this one is by far the easiest. Literally, four ingredients. And they always turn out delicious! My little tip: the easiest way to shred chicken is to bake it and after it cools a bit, stick the baked breasts in a big mixing bowl and, using a handheld mixer, start “mixing” the chicken. It shreds it quickly and perfectly every time!
Slow Cooker Pot Roast
This recipe is one of my favorites, especially because it is a meal I know my kids will gobble up! I’ve tried a lot of pot roast recipes and this one is my favorite. Super simple and, bonus, most of the work is done in the slow cooker.
Pulled Pork Stuffed Sweet Potato

Via The Novice Chef
This is a delicious and filling meal. And it’s also a slow cooker meal, which means less time for me in the kitchen. You can’t get much better than that!
Chicken Pot Pie
I made this recipe last week and it was a huge hit. The recipe makes two pies, one of which you can freeze for up to three months. This is a really delicious recipe, especially if you love comfort food!
Don’t they all look delicious? I love that they are so easy because, let’s be honest, ain’t nobody got time to be slaving away in the kitchen all evening. My kids would burn the house down if I took longer than 30 minutes to make a meal (please tell me I’m not alone here). Give one or two of these a try and tell me what you think!
